Savoury Salmon & Vegetable Omelette

Butter x 1.5g
Onion,chopped x 1
Spring onions, chopped x 2
Green pepper, chopped x half
Water chestnuts, chopped x 60g
Tomato, chopped x 1
Smoked salmon, chopped x 150g
Eggs x 4
F&N MAGNOLIA Lo-Fat Hi-Cal-Oat Milk x 185ml
Salt x 0.5 teaspoon
Pepper x 1 teaspoon




  1.  Melt butter in frying pan over a medium heat. Add onion, spring onions, green pepper and water chestnuts. Cook, while stirring, for 4 minutes.
  2. Add tomato and salmon. Cook for 1 minute. Cool to room temperature.
  3. Place eggs and milk in a bowl. Whisk more to combine. Add salmon mixture. Pour into a greased 20cm round ovenproof dish. Cook for 25 minutes or until it turns firm.
You can replace the salmon with other meats such as chicken or pork. However, if you choose to replace the meat, try adding a little more salt as they would not be as salty as the salmon. Set oven temperature as 180 degrees Celsius
